The issue I can see would be when you have a smaller aircraft and therefore the impact of mass would be greater.

 

I agree that inter-personal differences would also contribute to this risk.

IMHO, I don't see how this difference could lead to serious problems, given that this consideration has only a meaning on average and not on the actual case. In fact there could be far more differences between two adults or between two childs than between an adult and a child.

There's an interesting incident reported in this month's AAIB Bulletin, The AAIB is the UK's AIr Accidents Investigation Branch.

It seems that a software update to the airline's reservation system assumed that any passenger checking in with the title "Miss" was a child. This resulted in a Boeing 737 taking off with 38 adult females misidentified as children. As a result, the aircraft weighed 1,244 kg more than was stated on the load sheet that was passed to the flight crew. The aircraft took off without incident, but the error could have resulted in a very serious accident.
